Steven started his culinary profession following 6 years in the United States Marine Corp as an infantryman at HACC, completing a three-year American Culinary Federation apprenticeship program while working at the Cameron Estate Inn under executive chef Pansy Michaels. Steven was accepted into the prestigious Greenbrier Resort apprenticeship program under the tutelage of certified master chef Hartmut Handke and former white house chef Walter Sheib.
Over the next several years Steven worked at several private clubs and restaurants in both Pennsylvania and Florida before returning to the Greenbrier resort as the saucier and later, sous chef. Upon returning to PA Steven became the executive chef at Lancaster Country Club and later Bent Creek Country Club. Steven was also for a short time, the last executive chef at the log cabin restaurant under the ownership of Charles DiSantis.
Steven has had the privilege of cooking with many world famous chefs including Julia Childs, Jean Louise Paladin, Roberto Donna, and Rick Bayless to name just a few while assisting at the La Varenne cooking school at the Greenbrier.
Steven is a big proponent of using locally sourced ingredients at their freshest and has developed many great relationships with local farmers and purveyors.
